Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cubed
  • 1 cup buttermilk
  • 2 tablespoons sugar optional for a slightly sweet biscuit

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar (if using).
  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the buttermilk and stir gently until just combined. Be careful not to overmix; the dough should be slightly sticky.
  5. Turn the dough onto a floured surface and gently pat it out to about 1-inch thickness. Fold the dough over itself several times to create layers, then pat it out again to about 1-inch thickness.
  6. Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet, close together for taller biscuits.
  7. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits have risen nicely.
  8. Remove from the oven and let cool slightly before serving.

Notes

  • Use cold butter for the best texture in your biscuits.
  • Don’t overmix the dough to keep the biscuits light and fluffy.
  • Folding the dough helps create layers for a higher rise.
  • For even taller biscuits, place them close together on the baking sheet.
